Ingredients
  

  • 8 small corn or flour tortillas
  • 1 ½ cups shredded chicken ground beef, or roasted vegetables
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup shredded cheddar or Monterey Jack cheese optional
  • Cooking spray or light oil for brushing

Instructions
 

Prepare the Filling:

  • In a bowl, mix the shredded chicken, ground beef, or roasted vegetables with chili powder, cumin, garlic powder, and onion powder. Add cheese if desired.

Assemble the Taquitos:

  • Place a small amount of the filling in the center of each tortilla. Roll tightly and secure with a toothpick if needed.

Preheat the Air Fryer:

  • Preheat your air fryer to 400°F (200°C).

Cook the Taquitos:

  • Arrange the taquitos in a single layer in the air fryer basket. Lightly spray or brush with oil for crispiness.
  • Air fry for 8-10 minutes, flipping halfway, until golden and crispy.

Serve and Enjoy:

  • Serve hot with dipping sauces like guacamole, sour cream, or pico de gallo.

Notes

  • For vegetarian taquitos, use black beans or refried beans with your favorite veggies.
  • If using frozen taquitos, adjust the cooking time based on package instructions.
