  • 1 cup shredded cabbage
  • 1/2 cup grated carrots
  • 1/2 cup cooked vermicelli noodles optional
  • 1/2 cup bean sprouts
  • 1/4 cup chopped green onions
  • 1/2 cup cooked ground chicken shrimp, or tofu (for protein option)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1 tbsp cornstarch mixed with 2 tbsp water for sealing the rolls
  • Cooking spray or light oil for brushing

Instructions

  • Prepare the Filling: In a large bowl, combine cabbage, carrots, vermicelli noodles (if using), bean sprouts, green onions, and protein of choice. Add soy sauce, sesame oil, garlic powder, and ginger powder. Mix well.
  • Wrap the Spring Rolls:
  • Place a spring roll wrapper on a flat surface in a diamond shape.
  • Spoon about 2 tbsp of the filling near the bottom corner.
  • Fold the bottom corner over the filling, then fold in the sides.
  • Roll tightly to the top and seal with the cornstarch-water mixture.
  • Preheat the Air Fryer: Set to 375°F (190°C) and let it heat for 2-3 minutes.
  • Cook the Spring Rolls:
  • Lightly spray or brush the spring rolls with oil.
  • Arrange them in a single layer in the air fryer basket, leaving space between them.
  • Air fry for 6-8 minutes, flipping halfway through, until golden brown and crispy.
  • Serve and Enjoy: Let the spring rolls cool for a minute and serve with your favorite dipping sauce.

Notes

  • Dipping Sauce Options: Serve with sweet chili sauce, peanut sauce, or a soy-ginger dipping sauce.
  • Make-Ahead Tips: You can roll the spring rolls ahead and refrigerate them for up to 24 hours before air frying.
  • Freezing Instructions: Freeze uncooked spring rolls on a baking sheet, then transfer them to a bag. Air fry directly from frozen, adding a few extra minutes to the cooking time.
  • Avoid Sticking: Lightly spray the air fryer basket with oil or use parchment paper to prevent sticking.
