Ingredients

  • 2 cups all-purpose flour
  • 3 medium potatoes peeled and diced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon chili powder
  • 2 tablespoons ghee or oil
  • 1/2 cup water
  • 1/4 cup peas optional
  • Salt to taste
  • Fresh cilantro or mint optional
  • Oil spray for brushing

Instructions

Prepare the filling:

  • Boil the diced potatoes in water until soft. Drain and mash them. In a pan, heat the ghee or oil and sauté the cumin, coriander, and chili powder until fragrant. Add the mashed potatoes, peas (if using), and salt. Cook for another 3-5 minutes, mixing well. Remove from heat and let cool.

Make the dough:

  • In a bowl, mix the all-purpose flour, salt, and water until it forms a dough. Knead the dough for 3-4 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.

Shape the samosas:

  • Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten into a circle about 4 inches in diameter. Cut the circle in half to make two semi-circles. Form a cone shape with each semi-circle, sealing the edges with a little water. Fill the cone with the cooled potato filling and seal the top, pressing the edges to form a triangle. Repeat for all portions.

Air fry the samosas:

  • Preheat the air fryer to 400°F (200°C). Lightly spray the samosas with oil. Place the samosas in the air fryer basket in a single layer, ensuring they are not touching. Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.

Serve:

  • Serve hot with your favorite chutneys such as mint chutney or tamarind sauce.

Notes

  • You can customize the filling by adding veggies like peas, carrots, or lentils for a more hearty option.
  • For a spicier version, add chopped green chilies or extra chili powder to the filling.
  • If you prefer, you can also use store-bought samosa pastry sheets instead of making the dough from scratch.
  • Frozen samosas can also be cooked in the air fryer at 400°F (200°C) for 12-15 minutes, flipping halfway, for a quick and convenient snack.
  • Air fryers may vary in cooking time, so it's best to keep an eye on the samosas towards the end of cooking to ensure they don't burn.
