- 3 medium potatoes peeled and diced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon chili powder
- 2 tablespoons ghee or oil
- 1/2 cup water
- 1/4 cup peas optional
- Salt to taste
- Fresh cilantro or mint optional

Prepare the filling:
Boil the diced potatoes in water until soft. Drain and mash them. In a pan, heat the ghee or oil and sauté the cumin, coriander, and chili powder until fragrant. Add the mashed potatoes, peas (if using), and salt. Cook for another 3-5 minutes, mixing well. Remove from heat and let cool.
Make the dough:
In a bowl, mix the all-purpose flour, salt, and water until it forms a dough. Knead the dough for 3-4 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.
Shape the samosas:
Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten into a circle about 4 inches in diameter. Cut the circle in half to make two semi-circles. Form a cone shape with each semi-circle, sealing the edges with a little water. Fill the cone with the cooled potato filling and seal the top, pressing the edges to form a triangle. Repeat for all portions.
Air fry the samosas:
Preheat the air fryer to 400°F (200°C). Lightly spray the samosas with oil. Place the samosas in the air fryer basket in a single layer, ensuring they are not touching. Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.
