Ingredients
  

  • 2 large Russet or Yukon Gold potatoes
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional seasonings: smoked paprika garlic powder, truffle salt, or custom spice blend

Instructions
 

Prepare the Potatoes:

  • Wash and peel the potatoes.
  • Slice them into thin, even slices about 1/8-inch thick using a mandoline or sharp knife.

Soak the Slices:

  • Place the potato slices in a bowl of cold water and soak for 30 minutes.
  • Drain and pat them completely dry using paper towels or a clean kitchen towel.

Season the Chips:

  • In a large bowl, toss the potato slices with olive oil until evenly coated.
  • Sprinkle with sea salt, pepper, and your desired seasonings.

Arrange in the Air Fryer:

  • Lay the slices in a single, non-overlapping layer in the air fryer basket. Work in batches if necessary.

Air Fry:

  • Set the air fryer to 400°F (200°C). Cook the chips for 12-15 minutes, flipping halfway through.
  • Remove when they are golden brown and crispy.

Serve and Enjoy:

  • Let the chips cool slightly before serving. Store any leftovers in an airtight container.
