- 1 cup milk or non-dairy alternative
- 2 large eggs
- 2 tbsp maple syrup or honey
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tsp cinnamon optional
- ¼ cup mixed berries blueberries, raspberries, or strawberries
- ¼ cup chopped nuts almonds, pecans, or walnuts
- Pinch of salt
Preheat: Preheat your air fryer to 350°F (175°C). Lightly grease a muffin tin or use silicone muffin cups.
Mix Ingredients: In a large bowl, combine rolled oats, milk, eggs, maple syrup, baking powder, vanilla extract, cinnamon, and a pinch of salt. Stir well to form a smooth mixture.
Fill Muffin Cups: Divide the oatmeal mixture evenly among the prepared muffin cups, filling them about ¾ full.
