Ingredients
  

  • 1 ½ cups rolled oats
  • 1 cup milk or non-dairy alternative
  • 2 large eggs
  • 2 tbsp maple syrup or honey
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp cinnamon optional
  • ¼ cup mixed berries blueberries, raspberries, or strawberries
  • ¼ cup chopped nuts almonds, pecans, or walnuts
  • Pinch of salt

Instructions
 

  • Preheat: Preheat your air fryer to 350°F (175°C). Lightly grease a muffin tin or use silicone muffin cups.
  • Mix Ingredients: In a large bowl, combine rolled oats, milk, eggs, maple syrup, baking powder, vanilla extract, cinnamon, and a pinch of salt. Stir well to form a smooth mixture.
  • Fill Muffin Cups: Divide the oatmeal mixture evenly among the prepared muffin cups, filling them about ¾ full.
  • Add Toppings: Gently press in mixed berries and chopped nuts on top of each oatmeal cup. You can mix and match to suit your taste.
  • Air Fry: Place the muffin tin or cups in the air fryer and cook for 12-15 minutes, or until the oatmeal cups are golden and set. Insert a toothpick into the center of one cup to check; it should come out clean.
  • Cool & Serve: Allow the oatmeal cups to cool for a few minutes before removing from the tin. Serve warm or store in an airtight container for meal prep.

Notes

  • These oatmeal cups can be customized with your favorite mix-ins like dried fruits, chocolate chips, or seeds.
  • For meal prep, make a large batch and store them in the fridge for up to 5 days. Reheat in the microwave or enjoy cold.
