- 2 cups dried chickpeas soaked overnight
- 1/2 cup fresh parsley chopped
- 1/2 cup fresh cilantro chopped
- 1 small onion diced
- 3 cloves garlic minced
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tsp baking powder
- 1/2 tsp salt adjust to taste
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper optional, for heat
- 1 tbsp lemon juice
- 2 tbsp all-purpose flour or chickpea flour as needed for binding
- 1-2 tbsp olive oil for brushing or spraying
Soak Chickpeas: Place dried chickpeas in a bowl, cover with water, and soak overnight (at least 12 hours). Drain and pat dry.
Blend Ingredients: In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, black pepper, cayenne pepper, and lemon juice. Pulse until the mixture is well combined but not overly smooth.
Check Consistency: If the mixture is too wet, add 1-2 tablespoons of flour. It should be able to hold together when pressed.
Shape the Falafel: Use a small scoop or hands to form the mixture into balls or patties, about 1.5 inches in diameter.
Preheat Air Fryer: Set the air fryer to 375°F (190°C) and preheat for 3-4 minutes.
Arrange in Basket: Lightly brush or spray the falafel with olive oil and place them in a single layer in the air fryer basket, ensuring they are not overcrowded.
Cook Falafel: Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Serve: Enjoy immediately with pita bread, hummus, tzatziki, or in a Mediterranean bowl.
-
Avoid canned chickpeas: They are too soft and will make the mixture too wet.
-
Make ahead: Prepare the falafel mixture in advance and store it in the fridge for up to 2 days before air frying.
-
Freezing tip: Uncooked falafel can be frozen for up to 3 months. Simply thaw and air fry when needed.
-
Serving ideas: Pair with tahini sauce, yogurt-based dips, or fresh vegetable salads for a complete meal.
