- Egg roll wrappers - 1 package 12 wrappers
- Shredded cabbage - 2 cups
- Julienned carrots - 1 cup
- Diced onions - ½ cup
- Bean sprouts - 1 cup
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt and pepper - to taste
- Cooking spray - as needed
Prepare the Filling:
In a skillet over medium heat, sauté cabbage, carrots, onions, and bean sprouts.
Add soy sauce, rice vinegar, sesame oil, salt, and pepper. Stir well.
Cook until the vegetables are tender-crisp. Remove from heat and let the filling cool.
Roll the Egg Rolls:
Lay an egg roll wrapper on a flat surface in a diamond shape.
Place 2-3 tablespoons of the filling near the bottom corner.
Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal the top corner with water. Repeat for all wrappers.
Cook the Egg Rolls:
Lightly spray the egg rolls with cooking spray.
Arrange them in a single layer in the air fryer basket, ensuring they don’t touch.
Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
