Ingredients

  • 12 large eggs
  • 1/4 cup milk or dairy-free milk alternative
  • 1/4 cup shredded cheddar or Swiss cheese optional
  • Salt and pepper to taste
  • Desired mix-ins: e.g., diced bell peppers, spinach, crumbled bacon, cooked sausage, chopped herbs - amount varies

Instructions

Preheat the Air Fryer:

  • Set your air fryer to 350°F (175°C).

Prep the Ingredients:

  • Crack the eggs into a large mixing bowl and whisk until well combined.
  • Add the milk, cheese (if using), salt, and pepper. Mix until smooth.

Grease Muffin Pan:

  • Lightly grease your air fryer muffin pan or use silicone muffin cups to prevent sticking.

Assemble the Muffins:

  • Pour the egg mixture evenly into the muffin wells, filling each about 2/3 full to allow for rising.
  • Add your desired mix-ins gently into each muffin well.

Cook in the Air Fryer:

  • Place the muffin pan in the air fryer basket and cook for 10-12 minutes or until the muffins are puffed and fully set.
  • Check for doneness by inserting a toothpick; it should come out clean.

Cool and Serve:

  • Once cooked, carefully remove the muffins from the pan and let them cool slightly before serving.
  • Enjoy warm or store for later!
