Ingredients

  • 6 tomatillos husked and rinsed
  • 1 small onion quartered
  • 3 garlic cloves peeled
  • 2 green chilies Anaheim or Hatch
  • 1 tsp cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • ½ cup fresh cilantro

For the Burritos:

  • 2 cups cooked and shredded chicken or jackfruit for a vegetarian option
  • 4 large flour tortillas
  • 1 cup shredded cheese cheddar, Monterey Jack, or vegan cheese
  • 1 cup cooked rice optional
  • 1 cup black beans optional
  • Cooking spray or light brushing of oil

Instructions
 

Prepare the Green Chile Sauce:

  • Preheat the oven to 400°F (200°C). Arrange tomatillos, onion, garlic, and green chilies on a baking sheet. Roast for 15–20 minutes or until lightly charred.
  • Transfer the roasted vegetables to a blender. Add cumin, oregano, salt, pepper, and cilantro. Blend until smooth. Adjust seasoning as needed.

Assemble the Burritos:

  • Warm tortillas in a skillet or microwave to make them pliable.
  • Spread a generous layer of the green chile sauce in the center of each tortilla.
  • Add shredded chicken, cheese, and optional rice or beans.
  • Fold the sides of the tortilla inward, then roll tightly from the bottom. Secure with toothpicks if needed.

Air Fry the Burritos:

  • Preheat the air fryer to 400°F (200°C). Lightly spray or brush the burritos with oil.
  • Place burritos seam-side down in the air fryer basket, leaving space between them.
  • Air fry for 12–15 minutes, flipping halfway, until golden brown and crispy.

Serve:

  • Remove toothpicks before serving. Pair with guacamole, salsa, or a fresh salad for a complete meal.
