Ingredients

  • Cream Cheese: 8 oz 225g, softened
  • Granulated Sugar: 1/4 cup 50g
  • Eggs: 2
  • Vanilla Extract: 1 tsp
  • Optional Toppings: Fresh berries whipped cream, chocolate sauce, caramel sauce, crushed cookies or graham crackers

Instructions

  • Preheat the Air Fryer: Set your air fryer to 350°F (175°C).
  • Mix the Cheesecake Batter: In a medium bowl, combine the softened cream cheese, granulated sugar, eggs, and vanilla extract. Mix until smooth and creamy.
  • Prepare the Muffin Tin: Grease a mini muffin tin or silicone mold to prevent sticking.
  • Fill the Tin: Using a cookie scoop or tablespoon, divide the cheesecake mixture into the prepared muffin tin, filling each cup about three-quarters full.
  • Air Fry the Bites: Place the muffin tin in the preheated air fryer. Cook for 8-10 minutes or until the tops are golden brown and the centers are set.
  • Cool and Chill: Remove the bites from the air fryer and let them cool for a few minutes. Transfer to the fridge and chill for at least 2 hours to set.
  • Serve: Once chilled, pop the cheesecake bites out of the muffin tin. Serve them plain or topped with your favorite sauces and fruits.
