- 1 medium head cauliflower about 4 cups, riced
- 2 large eggs
- 1/2 cup almond flour or gluten-free breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp dried parsley
- Salt and pepper to taste

Prepare the Cauliflower
Cut the cauliflower into florets and rice it using a food processor or box grater.
Microwave the riced cauliflower for 3-4 minutes, then let it cool.
Using a clean kitchen towel, squeeze out as much moisture as possible.
Mix the Ingredients
In a large mixing bowl, combine the riced cauliflower, eggs, almond flour, Parmesan cheese, garlic powder, onion powder, parsley, salt, and pepper. Mix well until the mixture is cohesive.
