These colorful bell or Anaheim peppers are stuffed with scrambled eggs, cheese, and your favorite fillings, then air fried to perfection. Ingredients
  

  • 2 bell peppers or Anaheim peppers
  • 2 large eggs
  • 1/4 cup shredded cheese cheddar, mozzarella, or your choice
  • 1/4 cup cooked diced ham optional
  • Salt and pepper to taste
  • Fresh herbs optional, for garnish
  • 1 tbsp olive oil optional, for brushing peppers

Instructions
 

Prepare the Peppers:

  • Cut the peppers in half lengthwise, removing the seeds and membranes. Rinse and pat them dry with a paper towel.
  • Prepare the Filling:
  • Scramble the eggs in a bowl, adding salt and pepper to taste. You can add diced ham, veggies, or cheese to the scrambled eggs if desired.

Stuff the Peppers:

  • Stuff each pepper half with the scrambled egg mixture. Top with a sprinkle of shredded cheese.

Preheat the Air Fryer:

  • Preheat the air fryer to 400°F (200°C).

Cook the Peppers:

  • Place the stuffed peppers in the air fryer basket, making sure they’re not overcrowded. Air fry for 12-15 minutes, flipping halfway through, until the peppers are tender and the filling is hot and cooked through.

Serve and Enjoy:

  • Once done, remove the peppers from the air fryer and garnish with fresh herbs if desired. Serve immediately.

Notes

  • Customize Your Filling: You can swap the ham for other proteins like sausage, bacon, or tofu for a vegetarian option. Sautéed spinach, mushrooms, or bell peppers can also make great veggie options.
  • Make Ahead: You can slice and de-seed the peppers ahead of time and store them in the fridge for up to 2 days. Pre-make the scrambled eggs and keep them in the fridge for faster preparation in the morning.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F for 2-3 minutes for the best results.
  • Adjust Cooking Time: Depending on the size of your peppers, you may need to adjust the cooking time slightly to ensure they cook thoroughly. Keep an eye on them after the 12-minute mark.
