  • 8-10 large eggs beaten
  • 1 cup shredded cheddar cheese or cheese of your choice
  • 1/2 cup diced ham cooked bacon, or sausage (optional)
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers any color
  • 1/4 cup spinach or mushrooms optional
  • Salt and pepper to taste
  • Cooking spray or reusable air fryer liner

Instructions
 

Preheat the Air Fryer:

  • Preheat your air fryer to 350°F (175°C).

Prepare the Egg Mixture:

  • In a large bowl, whisk together the eggs, salt, and pepper.
  • Stir in the shredded cheese, diced ham (or meat of choice), onions, bell peppers, and spinach/mushrooms if using.

Prepare the Basket:

  • Grease the air fryer basket lightly with cooking spray or line it with a reusable air fryer liner.

Assemble the Casserole:

  • Pour the egg mixture evenly into the prepared air fryer basket.

Cook the Casserole:

  • Place the basket in the air fryer and cook for 12-15 minutes.
  • At the halfway mark, gently shake the basket to ensure even cooking.
  • Check if the casserole is set by inserting a toothpick or knife in the center (it should come out clean).

Serve Hot:

  • Carefully remove the casserole, let it cool slightly, and slice into portions.
